Banana con Panocha Muffins
Christmas is certainly in the air and to complement the holiday season I would like to share with you here what my sweet food blogger friend and her business partner have been baking and telling us all about. I was luckily invited to conduct a taste test of their Christmas goodies venture and as an avid fan of pastries I could excitedly write about my experience. Apparently, what will unfold here are the freshest baked creations made because of their smart ideas, great choices and skillful hands. Fresh ingredients which are locally sourced is ideally what they are so proud of. Now, allow me to tickle those taste buds of yours . . .and make sure to have your glass of water ready to properly hydrate you with all the sweet indulgence as you scroll down. Something worth sinking your teeth for. Banana con Panocha Loaf Cake ala Mode :)
The above baked goodies are attractively unusual. I surmise I have never ever eaten a single pastry before that I could equate with the ones above, making use of panutsa or panocha. I admire the passion for baking of Ms. Merna, a woman born and raised in Leyte, who is not only limited to what most of us are baking and enjoying as she promised to concoct something that has never been tried before. Something unique, worth exerting one's effort and worth indulging in the end.
Moreover, this is the version of Panocha Loaf Cake that is cacao-flavored and sided with caramelized peanuts. This is originally Pinoy recipe that we must be proud of as it made use of local raw materials to produce such a festive pastry.

We are deeply reminded that if something is organic, it is expensive yet nutritious and natural. This kind of panocha can be described as something not as sweet as refined sugar nor brown sugar. It has the right balance of sweetness that you cannot get enough of. Hence, this is so perfect for baking as I think it has lower glycemic index compared to that of table sugar and molasses. The sweetness level is guaranteed to make you feel like in heaven. Sweet enough not be so guilty.

A type of cookie that is enriched with vitamins with the aid of malunggay leaves. High in fiber also that aids in digestion. Sweet enough to satisfy your love for cookies. She was inspired to bake this years ago since she has a diabetic child and has been a source of good income since then.
This is a must-try! I'm warning you that you can easily fall in love with this variant. The cranberries in itmade the entire recipe somewhat premium. No wonder, how each piece deliciously match my taste for fine flat, soft cake. MmmmMM I could still taste it! How I wish she could produce a bigger version which is really of my liking.
Organic Raw Cacao
To display great relish for locally produced yet fine foods, let's toast for this cup of hot cacao. Bittersweet!
